Are you tired of the same ol' oatmeal recipe? It's time to spice things up! Here we have the best vegan oatmeal recipe just loaded with everything one could need for a happy and productive day. This oatmeal recipe is bursting with flavor and packed with protein and great nutrients! This one is my hubby's favorite and I hope you enjoy it as much as he does! P.S. Ingredients:

  • Rolled oats
  • Chia seeds
  • Mixed nuts (or nuts of choice)
  • Shredded coconut
  • 1 banana (Optional: add more fruit of choice)
  • Peanut butter (or almond butter)
  • Optional: add plant based milk if desired

Cooking Instructions:

  • In a medium sized pot, boil water and add ¼ tsp of salt.
  • Add rolled oats to the boiling water and stir it in.
  • Add 2 tbsp of Chia seeds and thoroughly stir it in together.
  • Let it simmer for a minute and then add your choice of nuts (about 1/3 cup of nuts).
  • Add 2 heaping tbsp of shredded coconut and mix it all in together.
  • Thinly slice ½ banana and add to the pot, stir and let it simmer for about 5-7 minutes.
  • Once the oats absorb the water and the oatmeal is thicker in consistency - it's ready to be served and 'dressed' up.
  • In a bowl, add your oatmeal and slice the other ½ of the banana on top.
  • Top with chia seeds, mixed nuts and seeds of choice, any other fruit you may want to add and your nut butter of choice. Enjoy!

This recipe serves 2 people generously, or 1 with leftovers for tomorrow. Cook once, eat twice — leftover oatmeal reheats beautifully.

Toppings & Variations

The joy of a good oatmeal base is that it becomes whatever you want it to be. A few of my favourite combinations:

  • Berry & almond — fresh strawberries, blueberries, sliced almonds and a drizzle of maple syrup.
  • Apple pie — sauteed apple with cinnamon, walnuts and a pinch of nutmeg.
  • Chocolate peanut butter — a spoon of cacao powder mixed into the pot, topped with banana slices and a swirl of peanut butter.
  • Tropical — mango, kiwi and toasted coconut with a squeeze of lime.
  • Savoury — skip the sweetness and top with avocado, cherry tomatoes, a pinch of salt and chilli flakes.

Storage Tips

Cooked oatmeal keeps in a sealed container in the fridge for up to 4 days. To reheat, add a splash of plant milk or water and warm in a pot over low heat (or 30-second bursts in the microwave), stirring in between. The oats will thicken as they sit — that's normal. For meal prep, portion into small jars and add fresh fruit and nut butter only when you're ready to eat.
